Recipe of the Week: Funchi from Bonaire!:
It’s time for the Recipe of the Week, and I must say, it’s a pleasure to make something from the Caribbean as I try to keep warm in this Arctic-like weather (it’s currently a chilly negative 30C – that’s negative 22F!!). Funchi, a side similar to polenta, is an accompaniment to most meals in Bonaire (especially soups and stews… perfect for a winter day!), and requires just a few ingredients.

Serves 6


Ingredients:

1 ½ cups cold water

1 ½ cups cornmeal

1 teaspoon salt

1 ¼ cups boiling water

1 tablespoon melted butter

Instructions:

In a large, heavy saucepan, mix cold water, cornmeal, and salt. Place the saucepan over high heat and stir in boiling water and butter, stirring constantly with a wooden spoon. Bring to a boil and continue to cook for three minutes. Boil for another three minutes while stirring briskly the entire time; continue to stir until the mixture thickens and pulls away from the sides of the saucepan, and remove from heat. Pour it into a large, greased bowl, and cover with a plate. Let it sit for about half an hour (or more), and then invert it onto a serving platter. Slice and serve with soup or alongside your favourite dish.
