Recipe of the Week: Smoked Chicken Salad from St. Barts:
Welcome to the Recipe of the Week: St. Barts edition! The island attracts the rich and famous, and its cuisine usually caters to that – but with a little searching, true Creole dishes can be found. This week, we’ve got a simple salad that uses easy-to-find ingredients, but together they create a flavour that is true to the island. The recipe, for Smoked Chicken Salad, is adapted from The Worldwide Gourmet. Though it calls for a smoked chicken, a pre-cooked rotisserie chicken will do in a pinch.



Smoked Chicken Salad

Adapted from The Worldwide Gourmet

Serves 2-4

Ingredients:

½ ripe avocado, crushed

1 large tomato, diced and crushed (*tip: use the flat edge of a large knife to crush the tomato)

½ green bell pepper, diced

3 green onions, sliced

2 cloves of garlic, smashed and minced

6 tablespoons oil

Juice of 2 limes (about 2 tablespoons)

1 tablespoon Dijon mustard

1 pinch hot chilli powder

1 pinch ginger (powdered)

Salt and pepper, to taste

1 smoked chicken, skinned, deboned, and roughly chopped

Instructions:

In a large bowl, combine the first four ingredients (avocado through onions), set aside. In a small bowl, whisk the next seven ingredients (garlic through salt and pepper) together, and then pour over the ingredients in the large bowl. With a large spoon, stir the mixture until combined and then fold in the chicken. Transfer to a platter and serve immediately.
