Golden Beet Salad from the Pacific NW, USA:

Golden Beet Salad

Adapted from
Pure Flavor by Kurt Beecher Dammeier

Serves 4-6

Ingredients:

1 ¼ pounds golden beets, trimmed and rinsed

1 ½ tablespoons rice vinegar or white wine vinegar

½ teaspoon sea salt

¼ teaspoon coarse ground pepper

1 tablespoon extra virgin olive oil

¼ teaspoon whole grain/coarse mustard

1 cup baby spinach, sliced

3 tablespoons toasted walnut pieces

¼ cup crumbled blue cheese (or, if you don’t like blue cheese, use crumbled goat cheese)

Instructions:

Preheat oven to 400 degrees Fahrenheit. Place the beets on a roasting pan and add water so it is ½ an inch deep. Cover the pan with foil and bake until beets are tender, about 1 ½ hours. Set beets aside until they are cool enough to handle and peel them. Slice them into ½ inch rounds, and then into ¼ inch sticks; set aside to cool completely. Toss the beets with the vinegar, salt, pepper, oil, mustard, and spinach. Garnish with walnuts and cheese.
