Recipe of the Week: Arroz con Leche:
Costa Rica boasts a variety of delicious foods inspired by the Caribbean, the indigenous people, and the other cultures that have inhabited the country over time. The result: fresh, beautiful dishes with a tropical flair and tons of flavor.

Our recipe of the week is Arroz con Leche –rice pudding. It’s a very popular dessert in Costa Rica, a sweet, delicate dessert that is refreshing when eaten chilled, and comforting when eaten warm. It’s also quite easy to make and uses ingredients that most people already have in their kitchen.

Arroz con Leche

Arroz con Leche

Serves 2-4


Ingredients:

1 cup long grain white rice

2 cups milk (whole milk works best)

2 cups granulated sugar

1 tablespoon vanilla

¼ teaspoon ground cinnamon

¼ teaspoon grated nutmeg

A few whole cloves

¼ cup butter

½ cup raisins

Directions:

Cook rice in a medium sized pot according to package directions. Add the remainder of the ingredients, stir well, bring to a boil, and then simmer for 30 minutes. Serve immediately, or refrigerate for several hours until thoroughly chilled.
