Recipe of the Week: A Quinoa Dessert from Chile!:
It’s time for some Manjar de Quinoa! It’s a Quinoa-based dessert from Chile, and it’s not only delicious, but it’s pretty easy to make! So get cooking – your taste buds will thank you for it.



Manjar de Quinoa

Ingredients:

3 cups quinoa

⅓ cup raisins

½ cup dark rum

3 cups milk (2% or whole)

2 cups heavy cream (35%)

2 cups granulated sugar

½ teaspoon salt

1 teaspoon ground cinnamon

¼ teaspoon ground cloves

½ cup grated dehydrated coconut (unsweetened, shredded)

4 egg yolks

Ground cinnamon, for finishing

Sweetened whipped cream or sour cream

Instructions:

1) Place the quinoa in a fine mesh sieve and rinse well with cold water. Drain and transfer the quinoa to a large pot and cover with cold water. Bring to a boil over high heat, stirring occasionally, and then remove from heat, drain, and rinse under cold water.  Return the quinoa to the pot, cover once again with cold water, and boil until the grains open. Remove from heat, drain, and set aside.

2) In a small bowl, mix the raisins and rum and set aside for at least 10 minutes.

3) In a large saucepan over medium heat, combine the cooked quinoa, milk, cream, sugar, salt, cinnamon and cloves and bring to a boil, stirring occasionally. Reduce heat to low and, continuously stirring, cook for 15-20 minutes, or until the liquid is reduced and thick. Add the raisins and rum, as well as the grated coconut, and cook for another 5-10 minutes, or until the mixture pulls away from the bottom of the pan. Remove from heat and beat in the egg yolks until completely incorporated.

4. Transfer the mixture to a serving platter and sprinkle with cinnamon. Serve at room temperature with whipped or sour cream.
