Chicken Shawarma with Moroccan Spices:


Traditionally speaking, the most popular Moroccan sandwich may be a wedge of Moroccan bread stuffed with kefta or tender spiced brochette meat and Salade Mechouia. Nonetheless, snack shops and restaurants are keen to offer a wide range of other sandwiches, including those with an international flare.

Among them is shawarma, a Middle Eastern sandwich of shaved chicken or lamb, usually wrapped in flatbread or pita along with yogurt-tahini sauce, lettuce and tomato and onion. You don't need to hunt down a restaurant that excels in making them, however, as a very good version can be made at home. My Moroccan Style Chicken Shawarma Recipe is easy to make, but you'll need to mix the ingredients ahead of time to allow for overnight or all-day marinating. And, although shawarma spice is available in Morocco, I find that Ras el Hanout works just as well in the traditional yogurt, garlic and lemon juice marinade.
