Recipe of the Week: Accras de Morue:
Accras de Morue is a typical snackfood or addition to meals on the beautiful island of Saint Martin / Sint Maarten. These Creole treats boast a ton of flavour, and easy to make, and are even easier to eat; so, grab some salt cod, heat up some oil, and get cooking, as this is the Recipe of the Week!
Accras de Morue
Serves 4-6

Ingredients:
½ pound boneless salt cod, cut into 2 inch pieces and rinsed
1 cup all purpose flour
¼ cup 2% milk
1 large egg
¾ teaspoon baking powder
¼ teaspoon allspice
3 garlic cloves, smashed and minced
1-2 hot chilies, seeded and minced
4 scallions, finely chopped
1 tablespoon chopped fresh cilantro
Vegetable oil (for frying)
Instructions:
Soak the salt cod in a large bowl of cold water overnight, changing water several times. Drain the cod, pat dry, and either chop finely or put it through a food processor until a rough puree is created. Transfer to a large bowl; add flour, milk, egg, baking powder, allspice, and the garlic. Mix well (alternately, if using a food processor, add the ingredients to the pureed cod and pulse until combined). Mix in the chilies, scallions, and cilantro with a wooden spoon.
Heat 1 ½ inches of oil in a large, deep frying pan so it reaches 360 degrees Fahrenheit. Gently drop teaspoonfuls of the batter in the oil, 5 or 6 at a time, and cook until golden, flipping often, about 2 to 3 minutes. Using a slotted spoon, transfer fritters to a plate lined with several layers of paper towel. Serve immediately.
