Recipe of the Week: Christmas Coconut Bread from St. Kitts & Nevis:
Saint Kitts and Nevis is a two-island country in the Caribbean that can easily be described as a tropical paradise. The weather is hot, the soil fertile, and the culture cliché: “mellow, friendly, familiar and with a pulsing soca beat,” according to Lonely Planet.
This week’s Recipe of the Week is Coconut Bread; a popular addition to Christmas celebrations in St. Kitts and Nevis. I suggest you make it more often than just during the holidays, however, and bring a touch of the Caribbean to your life!
Coconut Bread

Makes 1 loaf
Ingredients:
1/3 cup butter, at room temperature
1 cup granulated sugar
2 large eggs, at room temperature
1 ¼ cup milk
2 teaspoons vanilla extract
2 ½ cups all purpose flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1 cup fresh shredded coconut
Instructions:
Preheat oven to 350 degrees Fahrenheit and grease and flour an eight by four inch loaf pan. In a large bowl, beat the butter and sugar until light and creamy. Stir in eggs, one at a time, mixing well between each addition, and then add the milk and vanilla, and mix until smooth. Set aside. In a medium bowl, whisk the flour, baking powder, cinnamon, and coconut. Add the mixture to the wet ingredients in the large bowl and stir just until combined. Pour into the prepared loaf pan and bake for about 60 minutes, or until a toothpick inserted into the centre comes out clean. Cool for five to ten minutes, remove loaf from pan, and let cool on a wire rack for about half an hour. Once cool, store in an airtight container – eat within a couple of days (... that shouldn’t be a problem!).
